How to Prepare Your Spaghetti

Start by chopping up fresh bell peppers to mix in with riced cauliflower. This lunch option pairs well with almost any vegetable. You can use up what you have in the fridge and freezer but riced cauliflower is always and easy option. Tomatoes are another option and really elevate the flavor.


Once the vegetables are chopped add them to a microwave safe dish with 3/4 cup of water or vegetable broth and your spices of choice. This lunch package is fantastic as it is, but adding a bit more Italian flavor and garlic would make it even more fabulous.

A Little Extra Tomato Makes it Fabulous

Microwave the veggies in the water for 4 minutes until all the vegetables are soft. Alternatively you can add the ingredients to a small sauce pan and simmer.

Mix in the Spaghetti Mix

Once the veggies are soft mix in the soup mix. Taste and adjust spices to your preference. If you are going to eat right away you will need to microwave for another minute to soften the noodles and package ingredients.

Ingredients

  • 1 package Proti Meal Vegetable Bolognese

  • 1/2 cup riced cauliflower

  • 1/2 cup diced red bell pepper.

  • 1/4 cup diced tomatoes

  • 3/4 cup of water

  • * Optional – 1/4 teaspoon ea. garlic and Italian spice

Directions

  • Microwave chopped vegetables, chopped tomato, liquid and spices in a microwave safe dish for 4 minutes, until veg is soft.
  • Method 2 -Add all your liquid, spices and vegetables to a small pot and simmer.
  • Stir in Spaghetti package
  • If consuming right away microwave for 1 more minute, or simmer for another minute.
  • If eating later, cover and refrigerate.
  • To reheat: add a small amount of water and cook for 2 minutes.
