TThis protein cheesecake is incredibly easy to make. By reducing the sweetener, it becomes a perfect low-carb, high-protein breakfast option. Enjoy it with strawberries or mixed berries for an added burst of flavor. It’s delicious!

Ingredients

  • 2 cups of cottage cheese

  • 1/2 cup of non fat greek yogurt

  • 1/2 cup of sweetener (or to taste)

  • 1 Tablespoon of lemon juice

  • 1/4 tsp of lemon extract

  • 2 eggs

  • Blueberry Sauce
  • 2 cups of fresh or frozen blueberries

  • 1/2 Tablespoon of sweetener

  • 1/4 tsp of xanthan gum

  • Crust
  • 1/4 cup of golden flax meal

  • 1/2 cup of almond flour

  • 1 Tablespoon of sweetener

  • 1/2 tsp of vanilla

  • 3 Tablespoons of melted butter

Directions Crust & Filling

  • Mix all dry ingredients together.
  • Add butter and vanilla. Mix to crumb texture.
  • Press in pie plate.
  • Bake for 10 minutes at 350. Let Cool.
  • Mix cottage cheese well with a blender, in a food processor or with an immersion blender.
  • Add in 2 room temperature eggs, one at a time. Blend.
  • Add in yogurt and sweetener. Blend.
  • Stir in lemon juice and extract.
  • Poor cheese cake mixture into cooled pie crust and bake for 45 minutes at 350.
  • Cheesecake is done when the center is set but still jiggly, Turn off oven and open door. Let the cake cool in the warm oven for 10 minutes. Then let cool down on counter until room temperature. Refrigerate until set.
  • Blueberry Sauce
  • Add blueberries and water to a sauce pan and simmer for
  • Mix 1/2 Tablespoon sweetener and xanthan gum in a small bowl. Add in a small amount of liquid and stir until a smooth paste. don’t skip this step or the xanthan gum will clump.
  • Add paste to blueberries and let simmer for another 5 minutes and then let cool.
  • Once the blueberries have cooled and thickened, spread over cheese cake.
