Start by gathering your ingredients for this simple dish that can be made with a variety of vegetables. In this recipe, we will utilize some common vegetables that are usually readily available, such as cauliflower and peppers.

Add 1-2 cups of vegetables to a microwave-safe dish, along with 1/2 cup of fat-free chicken broth. Microwave the dish for 4 minutes.

After cooking the vegetables, mix in the mushroom pasta. Allow the pasta to sit for a few minutes to soften. For best results, prepare this in the morning, transfer it to a Tupperware container, and reheat it at lunchtime. This will allow the pasta to absorb the liquid and become tender.

At lunch transfer your creamy mushroom pasta to a bowl and then reheat for 1 – 2 minutes until warm.

Optional Add-ins

  • Add in sautéed mushrooms, before reheating.
  • Add in 1 – 2 ounces cooked chicken.

    • 1 package Ideal Protein Creamy Mushroom Parmesan

    • 1 cup riced cauliflower

    • 1/2 cup diced yellow pepper

    • 1/2 cup green beans

    • *optional sub out 1/2 cup of vegetables for sautéed mushrooms.

    Directions

    • Add vegetables and broth to a microwave dish.
    • Microwave for 47 minutes
    • Stir in Creamy Mushroom Parmesan package
    • Cover and refrigerate.
    • Add in sautéed mushroom before reheating.
    • Reheat at lunch for 1 – 2 minutes
