Looking for an easy and tasty lunch option that will keep you full and maintain your energy? Look no further than this creamy mushroom pasta recipe.


  • 1 Ideal Protein Mushroom Pasta
  • 1  cup riced cauliflower
  • 1/2 cup vegetable or mushroom broth
  • 1/2 cup sauteed mushrooms
  • *optional 2 of cooked, cubed chicken breast



  1. Microwave the cauliflower rice in the broth for 2 minutes.
  2.  Brown sliced mushrooms.
  3.  Mix pasta into the cauliflower rice and microwave for 2 more minutes.
  4.  Stir in mushrooms and chicken.


Make this ahead of time and reheat for lunch. You can use fresh or frozen cauliflower and fresh or canned mushrooms.
