- 1 Ideal Protein Mushroom Pasta
- 1 cup riced cauliflower
- 1/2 cup vegetable or mushroom broth
- 1/2 cup sauteed mushrooms
- *optional 2 of cooked, cubed chicken breast
- Microwave the cauliflower rice in the broth for 2 minutes.
- Brown sliced mushrooms.
- Mix pasta into the cauliflower rice and microwave for 2 more minutes.
- Stir in mushrooms and chicken.
Make this ahead of time and reheat for lunch. You can use fresh or frozen cauliflower and fresh or canned mushrooms.
