How to Prepare Your Soup

Start by chopping up fresh cabbage, which is the primary vegetable in this soup, and I’ve used freshly chopped cabbage, but pre-packaged cabbage could also be used. The soup is complemented by freshly chopped tomatoes. While there are many possible combinations of vegetables that would go well with this dish, the tomatoes are a must-have and really elevate the flavor to the next level.


Once the cabbage is chopped down add it to your food processor to further chop into smaller pieces.

Combine water, tomato paste, cabbage and tomato in a microwave-safe dish, then heat it for 6 to 8 minutes until the cabbage is soft. If you’re using pre-packaged cabbage, it will cook a lot faster. Alternatively you can add the ingredients to a small sauce pan and simmer.

Cooking your soup on the stovetop provides you with the freedom to experiment with different ingredients. You can add more broth, fresh spices, and simmer until all the flavors blend together perfectly. It’s my go-to method for preparing broth because it allows me to be more creative. I will often add more water and celery and make a larger bowl of soup.

Ingredients

  • 1 package Proti Diet Beef Noodle Soup

  • 1 cup chopped cabbage

  • 1/4 cup chopped tomato

  • optional 1/2 cup chopped celery

  • 1/2 teaspoon Italian spice

  • 1/2 teaspoon The Keg Steak Spice or 1/8 teaspoon pepper.

  • 1 tablespoon tomato paste

  • 1 to 1.5 cup water (or 1/2 broth, 1/2 water)

Directions

  • Microwave chopped cabbage, chopped tomato, tomato paste, liquid and spices in a microwave safe dish for 6 to 8 minutes, until veg is soft.
  • Method 2 -Add all your liquid, spices and vegetables to a small pot and simmer.
  • Stir in Beef Noodle Soup
  • If consuming right away microwave for 1 more minute
  • If eating later, cover and reheat at lunch.

If you intend to consume the soup immediately, heat it in the microwave for an additional minute. Alternatively, if you plan to eat it later, cover it and reheat it at lunchtime.
