Satisfy Your Spicy Cravings with Protein-Packed Vegan Lentil Curry
Looking for a quick, tasty, and nutritious lunch option? Give this vegan lentil curry a try – it’s rich in protein and bursting with delicious flavors. Simply add water and vegetables, and your satisfying meal is good to go.
How to Prepare Your Curry
Start by chopping up fresh bell peppers to mix in with riced cauliflower. This lunch option pairs well with broccoli. You can use up what you have in the fridge, but riced cauliflower is always and easy option.
Once the vegetables are chopped add them to a microwave safe dish with 3/4 cup of water or vegetable broth and your spices of choice. This lunch package is fantastic as it is, but adding a bit more curry, cumin or garlic really elevates the flavor.
Use fat free broth instead of plain water for more flavor.
Microwave the veggies in the water for 4 minutes until all the vegetables are soft. Alternatively, you can add the ingredients to a small saucepan and simmer. Mix in the Curry package. Taste and adjust spices to your preference. If you are going to eat right away, you will need to microwave for another minute to soften the dehydrated lentils.
Make Your Lunch Ahead of Time and Store in a Glass Microwave Bowl.
Prepare your lunch in the morning and store it in a microwave-safe dish. This method is ideal for lunch preparation as it allows the noodles and ingredients to soften and the flavors to blend perfectly. By prepping all your veggies in advance, you can easily put together your lunch in no time, ensuring it’s ready for you whenever you need it.
Simply reheat your lunch for 1-2 minutes until it’s hot. If the spaghetti has solidified too much, add a bit more water before reheating.
