First Prepare Your Curry
Start by chopping up 1/2 cup of fresh bell peppers to mix in with 1.5 cups of riced cauliflower. This lunch option pairs well with broccoli. You can use up what you have in the fridge, but riced cauliflower is always and easy option.
Once the vegetables are chopped add them to a microwave safe dish with 3/4 cup of water or vegetable broth and your spices of choice. This lunch package is fantastic as it is, but adding a bit more curry, cumin or garlic really elevates the flavor.
Use fat free broth instead of plain water for more flavor.
Microwave the veggies in the water for 4 minutes until all the vegetables are soft. Alternatively, you can add the ingredients to a small saucepan and simmer. Mix in the Curry package. Taste and adjust spices to your preference. If you are going to eat right away, you will need to microwave for another minute to soften the dehydrated lentils.

1/4 tsp of baking powder
1/2 tsp of sweetener (optional)
1 egg
* Optional – extra curry or cumin
Directions
- Whisk and egg in a good-sized mug.
- whisk in 1/4 tsp of baking powder.
- Whisk in 1/4 to 1/2 tsp of sweetener.
- Stir in 1/3 cup of the premade lentil curry.
- Microwave for 2 minutes on high.
- Let the bread cool. Cut in half and toast before eating.
