One of my favorite ways to enjoy Ideal Protein Ranch Dorados is with this fresh homemade salsa. It takes just a few minutes to make in the food processor and turns a bag of chips into a much more satisfying snack. The tomatoes, cucumber, peppers, celery, herbs, and dill pickle add plenty of fresh flavor and crunch without adding many calories. Make a batch at the beginning of the week and keep it in the fridge for a quick snack or side whenever you need it.
Garden Salsa

3 medium tomatoes, roughly chopped
1 green bell pepper, chopped
½ red bell pepper, chopped
2 celery stalk, chopped
½ English cucumber, chopped
dill pickle, chopped
2 tablespoons white vinegar (or apple cider vinegar)
1 clove fresh garlic
2 Tablespoons fresh red onion
1 tsp dried dill
1 tsp dried oregano
1/2 tsp cumin
salt and pepper to taste
fresh cilantro and parsley
Directions
- Add all ingredients to a food processor.
- Pulse until everything is finely chopped but still slightly chunky. Avoid over-blending.
- Taste and adjust the vinegar or seasonings if needed.
